Ingredients (Serves 4)
- 2 cups Fennec Frozen Regular Mixed Vegetables (peas, carrots, corn, green beans)
- 1 ½ cups farro, rinsed
- 3 cups vegetable broth (or water with seasoning)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 cup cherry tomatoes, halved
- ½ cup fresh parsley, chopped
- ¼ cup feta cheese, crumbled (optional)
- 2 tbsp lemon juice
- 1 tsp dried oregano
- ½ tsp smoked paprika
- Salt and pepper, to taste

Cook the farro
In a medium pot, combine farro and vegetable broth. Bring to a boil, then reduce heat and simmer for 25–30 minutes until tender but still slightly chewy. Drain any excess liquid if needed. -
Sauté the vegetables
Heat olive oil in a large skillet over medium heat. Add onion and garlic, cooking for 2–3 minutes until fragrant. Add Fennec Frozen Regular Mixed Vegetables and cook for 6–8 minutes until heated through. -
Build the dish
Add cooked farro, cherry tomatoes, oregano, smoked paprika, salt, and pepper to the skillet. Stir well and cook for another 2–3 minutes to combine the flavours. -
Finish and serve
Remove from heat and add lemon juice and fresh parsley. Top with crumbled feta cheese for a creamy, Mediterranean finish.
