One-Pan Herb Pork Chops with Peas & Carrots and Roasted Potatoes

Ingredients (Serves 4)

  • 4 bone-in pork chops (about 1-inch thick)
  • 1 bag Fennec Frozen Peas & Carrots
  • 6–8 medium potatoes, cut into quarters
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp dried rosemary (optional)
  • Salt and freshly ground pepper, to taste
  • ½ cup chicken broth
  • 1 tbsp butter (optional, for finishing)

Instructions

  1. Prepare the pork chops
    Preheat oven to 400°F (200°C). Pat pork chops dry and season generously with salt, pepper, paprika, thyme, and rosemary.
  2. Sear for extra flavour
    Heat 1–2 tablespoons of olive oil in a large oven-safe skillet or roasting pan over medium-high heat. Sear pork chops for 2–3 minutes per side until golden brown. Remove and set aside.
  3. Add the potatoes
    In the same pan, add the quartered potatoes, remaining olive oil, garlic, salt, and pepper. Toss to coat with the pork chop juices and roast for 20 minutes, turning halfway through.
  4. Create the complete one-pan dish
    Add the Fennec Frozen Peas & Carrots directly to the pan with the potatoes. Pour in the chicken broth and place the seared pork chops on top of the vegetables.
  5. Finish cooking
    Return the pan to the oven and cook for another 15–20 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the potatoes are tender.
  6. Serve
    Finish with a sprinkle of fresh parsley and a small pat of butter over the vegetables for added richness. Serve everything together straight from the pan for a hearty, balanced meal.
