Ingredients (Serves 9-12)

Peach Filling

  • 4 cups Fennec Frozen Sliced Peaches, thawed and drained
  • 2 tbsp brown sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • ½ tsp cinnamon

Cake Batter

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk

Crumble Topping

  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup rolled oats
  • ½ tsp cinnamon
  • ½ cup cold butter, cubed

Instructions

  1. Prepare the peaches
Preheat oven to 350°F (175°C). Grease a 9-inch square baking dish. In a bowl, combine Fennec Frozen Sliced Peaches with brown sugar, lemon juice, vanilla, cornstarch, and cinnamon. Set aside.
  2. Make the cake batter
In a medium bowl, mix flour, baking powder, and salt. In a separate bowl, beat butter and sugar until light and creamy. Add eggs one at a time, then mix in vanilla. Gradually add the dry ingredients, alternating with milk, until a smooth batter forms.
  3. Assemble the cake
Spread the cake batter evenly into the prepared baking dish. Arrange the peach mixture over the top, gently pressing the peaches into the batter.
  4. Add the crumble topping
Combine flour, brown sugar, oats, and cinnamon. Cut in cold butter until the mixture becomes crumbly. Sprinkle evenly over the peaches.
  5. Bake
Bake for 45–50 minutes, or until the top is golden and a toothpick inserted into the cake portion comes out clean.
  6. Serve and enjoy
Allow the cake to cool slightly before slicing. Serve warm with vanilla ice cream or a dollop of whipped cream for an extra special dessert.
