Raspberry Filling

Cake Layer
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
Oat Crumble Topping
- 1 cup rolled oats
- ¾ cup all-purpose flour
- ½ cup brown sugar
- ½ tsp cinnamon
- ½ cup cold butter, cubed
Instructions
1. Prepare the raspberry filling
In a saucepan over medium heat, combine Fennec Frozen Whole Raspberries, sugar, and lemon juice. Cook for 5–7 minutes until the berries soften and release their juices. Stir in cornstarch and cook for another 1–2 minutes until thickened. Remove from heat and mix in vanilla. Allow to cool slightly.
2. Make the cake batter
Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
In a bowl, combine flour, baking powder, and salt. In a separate bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then add vanilla. Gradually mix in the dry ingredients, alternating with milk, until a smooth batter forms.
3. Assemble the layers
Spread the cake batter evenly into the prepared pan. Spoon the raspberry filling over the batter and gently spread it into an even layer.
4. Add the oat topping
